Sitting at 1400 masl, Frinsa boasts six distinct growing plots, offering a diverse range of cultivars, from Typica to Sigararutang. The name “Manis,” meaning “sweet” in Bahasa, perfectly captures the essence of this natural coffee, loved by all.

The processing of Frinsa Manis #1 is a testament to precision and care. Whole cherries are dried naturally without additives, allowing the coffee to embody its terroir’s pure flavors. The cherries are hand-picked, dried, and meticulously sorted to create a balanced and refined cup. This exceptional washed coffee is processed at the Gathaithi Factory in Nyeri, an area renowned for its intense, complex and rich flavor profiles of its coffees. The Gathaithi Factory, operated by the Gathaithi Farmers’ Society, is located at an altitude of 1450 meters above sea level, providing ideal conditions for growing coffee. About 1,600 active farmers, each with small farms comprising 100 to 250 trees, deliver their cherries to this station. They mainly grow SL varieties, with a portion of Ruiru 11, contributing to a coffee that incorporates the region’s rich volcanic soils and meticulous processing techniques.

The washing method at Gathaithi involves hand sorting the cherries to remove unripe or overripe fruit. An Agaarde disk dekering machine removes the skin and pulp, and the kernels are sorted by density. The highest quality beans are fermented for 16-24 hours, washed and then soaked in clean water for 16-18 hours. This meticulous process, followed by sun drying on African drying beds for up to 21 days, yields a coffee with great structure and elegance, with notes of blackcurrant, black tea, citrus, white grape and apricot.

Καφές από την χώρα του Μεξικό, βασισμένος στην σύγχρονη μέθοδο αποκαφεϊνοποίησης Swiss Water όπου δεν χρησιμοποιούνται καθόλου χημικές ουσίες. Τα πλούσια γευστικά χαρακτηριστικά του θα κάνουν πολλούς να αναρωτηθούν εάν ο καφές είναι όντως decaf.

Τα κεράσια καφέ συλλέγονται και στη συνέχεια ταξινομούνται με το χέρι για να αφαιρεθούν τα άγουρα και τα υπερώριμα κεράσια πριν παραδοθούν στο σταθμό πλύσης για επεξεργασία.
Τα κεράσια πολτοποιούνται,το δέρμα και ο πολτός φρούτων αφαιρούνται και έπειτα καθορίζεται η πυκνότητα που έχουν. Η περγαμηνή στεγνώνει σε υπερυψωμένα κρεβάτια στον ήλιο για 12 – 15 ημέρες. Ο χρόνος εξαρτάται από το πάχος των στρώσεων και τις θερμοκρασίες. Για να έχουν εξαιρετική ποιότητα ταξινομούν συνεχώς την περγαμηνή στα τραπέζια στεγνώματος. Οι καφέδες συσσωρεύονται και καλύπτονται με δίχτυα σκιάς ή πλαστικό κατά τις πιο ζεστές ώρες της ημέρας και κατά τη διάρκεια της νύχτας!

Caballero coffees are named after Marysabel Caballero, although in reality both Marysabel and her husband, Moises Herrera, create these beautiful coffees. Moises always lovingly says that the star of their work is his wife! They are extremely successful in producing quality coffees and have helped improve the reputation of quality Honduran coffees. Everything they do on the farms is documented and they invest significant time and resources in both new equipment and planting new coffee varieties in order to improve the quality of the coffee.

They are dedicated to the environmental sustainability of their farms and much of their energy and focus goes into improving the soil to ensure a healthy growing environment for the coffee bushes. Therefore, they produce organic compost from cow and chicken manure mixed with coffee cherry pulp and other organic material. This is used in addition to some mineral fertilizer to ensure the coffee plants get the nutrients they need. As you can see, it shows how much they love their work! The most common characteristics in coffees are the rich aroma of fruits, such as red berries, black grape and plum, they have a dense body, complex and juicy finish!
