El Vergel Estate, located in Fresno, Tolima, thrives under the care of brothers Shady and Elias Bayter. Raised in a farming family that originally cultivated avocados, the brothers took the leap into the world of coffee in 2012. Their passion and dedication led them to discover the specialty coffee movement in 2014, setting a new course for El Vergel. Surrounded by the rich, volcanic soils of Nevado del Ruiz, the estate benefits from a unique microclimate that contributes to the exceptional quality of their coffee.
The Natural Anaerobic method used at El Vergel Estate is a testament to the brothers’ commitment to quality and innovation. 83% Red & Yellow Caturra from their own estate and 17% from neighboring farms are processed using this meticulous technique. The cherries undergo fermentation under controlled anaerobic conditions, followed by drying on African raised beds (marquesinas) and then mechanical drying. This approach reveals a complex flavor profile with rich notes of Brown Spice, Black Tea, Chocolate, Roasted Hazelnut, Tropical Fruits, Citric Acidity, and Lime.
