Bokasso coffee surprises us with its unique flavor complexity and purity. It originates from the Sidama Cooperative Farmers Union and is located in the same area. It is always different from most other coffees! The washing station is located in an extremely high altitude area compared to most locations in Sidama. They have proven over time their ability to consistently produce great coffees. The challenge with these coffees is that they are stored after harvest and can take several months to open.
Coffee cherries are picked and then sorted by hand to remove unripe and overripe cherries before being delivered to the washing station for processing.
The cherries are pulped, the skin and fruit pulp are removed and then their density is determined. The parchment is dried on raised beds in the sun for 12 – 15 days. The time depends on the thickness of the layers and the temperatures. To have excellent quality they continuously sort the parchment on the drying tables. Coffees are piled up and covered with shade nets or plastic during the hottest hours of the day and overnight!
