Indonesia has a big bias against it, due to the more earthy profiles that still predominate for the most part.
The cherry for this batch, which will be a mixture of varieties, is grown by some select growers located in West Java, locally called Sunda. These farms are located at altitudes of 1300 – 1500 m.
The coffees are processed at the Frinssa Estate, their wet mill is located at 1400 pm. and has a ventilated storage area and dry mill. This means they have full control of their product from harvest to grading, sorting and shipping. The guys at Frinsa really know how to work it and even though the climate works against drying this way, they find a way and get clean delicious profiles.
