Norbil Pérez’s La Chirimoya farm is located in the Cajamarca region of northern Peru, a geographic area with a strong presence in specialty coffee production. Norbil is a member of the Aromas del Valle cooperative, which has operated since 2021 as a collaborative structure aiming to better represent and develop its members.
This particular lot has undergone natural processing, a method that enhances sweetness and highlights the aromatic character of the fruit. The notes of berries and floral elements result from slow drying at high altitude, offering complexity and depth in the cup.

We chose this coffee for its intense, ‘jammy’ sensation, its distinctive clarity, and its consistently high quality score. It is a coffee that showcases the value of sustainable production and the tradition of small-scale producers in Peru.
